Paulie iv plasterboard there to fit the big hole i suppose a bag of skimcoat and put it across the whole wall it should be good for the splash back for tiles
The most practical solution is to patch the holes with bonding to get a new flat surface and then tile it. Why you want to remove the plaster board is not practical at all. Have you got a tiler?

@Paul M. No that’s just sample. They are 25cm x 5cm. We want them placed vertically
What size tiles? Is it the small one in the photo?

It's too late now but it'd be better to just tile on top of the original tiles
Ok. But what space is between the wall and the back edge of the hob?

I didn't know or could I see that there's big holes in the plaster board which obviously needs to be replaced with new plaster boards.
